CABERNET-SAUVIGNON

Cabernet-Sauvignon characterized by great ecologo-geographical flexibility is used for production of high-quality wine nearly in all winemaking countries.

The wine made from Cabernet-Sauvignon is balanced and lasting. The wine combines both delicate and rich (but not excessive) taste, has steady and quite intensive colour. The peculiarity of wine bouquet and taste is the smell of nightshade or morocco. Young wine makes this bouquet more intensive. The process of wine seasoning is accompanied by change and elevation of its specific bouquet. The elements extracted from grape peel is of great importance in creating a bouquet of a seasoned Cabernet.

Smell: blackberry, cedar, cigar trunk, lead pencil, green pepper, mint, dark chocolate, tobacco, olives.

MERLOT

Merlot bears resemblance to Cabernet-Sauvignon, but it has less quantity of tannin and reduced smell of blackberry. This allows wine to be more delicate, plum, to have less period of seasoning. The young Merlot wine is less balanced than Cabernet-Sauvignon one, it needs less time for seasoning - 1,5-2 years.

Smell: often the same as Cabernet-Sauvignon has, but there are more shades of plumps and roses, then blackberry, more spices and fruit cake than mint and cedar.

PINOT NOIRE

It is a French sort also called Pinot Franc. The facts that this vine is rather freakish and the process of its adaptation to new places is quite complicated predetermine its cultivation at small areas.

This sort is characterized by relatively low tannin and acid content, moderate, not deep, depth of colour and average life cycle.

Black Pinot is mainly used for the production of high-quality champagne, red table wines usually in blending with other sorts. There are numerous varieties of Pinot Noire. Among these are Pinot Gree and Early Pinot (Iskiya).

Smells: raspberry, strawberry, cherry, cranberry, violet, rose, wild fowl.

CABERNET FRANC

This sort is usually used in Bordeaux to mix with Cabernet-Sauvignon. Being delicate, less refined, this sort of grape endows wine with lightness, more vivid taste of verdure and less quantity of tannin.

Smells: green pepper, blackberry (both berries and leaves), fresh potatoes, strawberry, chocolate.

ISABELLA

This is an American late maturing sort. Having been imported to Europe among the first American sorts, it became very popular as a high-yielding wine grape resistant to fungus diseases, phylloxera and frost.

Table wines made from Isabella have pink colour and specific flavour of "Isabella". In grape juice this flavour bearing a shade of strawberry is more pleasing. Having been treated with heat, the flavour acquires in sweet wines various shades.

SAPERAVI

This is a Georgian late-maturing sort called for the large quantity of colouring agents in berries ("Saperavi" means dyer). Unlike most of red grapes, Saperavi has light pink juice. This sort is characterized by the appearance of the shade of cream in the process of seasoning.

CHARDONNAY

This white vine is widely cultivated in many countries - in France (in Burgundy and Champagne), Italy, America, Argentine, Moldavia, Russia, and Georgia.

Chardonnay is one of the most famous grapes. Winemakers show preference for it for its easy cultivation: the sort is strong, resistant and fruitful under various climatic and soil conditions.

Wine materials made from Chardonnay are considered to be fine blend components. The world's best wines made in Burgundy and Champagne are produced from Chardonnay.

The wines made from Chardonnay have rich, delicate, oily, fruit taste with or without a vanilla shade of an oak tun. They have neither acuteness nor vivid acidity.

Smells: apple, pear, citrus plants, melon, pineapple, peach, oil, wax, toffee (sweets made from sugar and butter), butterscotch (sweets made from caramel and butter), vanilla, a mixture of spices, damp fur, minerals.

SAUVIGNON

Table wine made from this grape has a grading bouquet, balanced and delicate taste. The sort is used for the production of table wine, champagne and cognac.

Smells: fresh grass, gooseberry, leaves of blackberry, tinned asparagus or green beans (as a rule this is an undesirable smell), sometimes minerals.

RIESLING

It is the most widely cultivated sort on the banks of the Rhine and Moselle. Original Riesling cultivated in Germany is considered to be one of the best sorts in the world. Like Sauvignon, it has its own peculiarities and high degree of acidity. When being grown in northern regions on warm south slopes in slate and clay soil, the grape endows wine with fine bouquet, a delicate and soft taste. But Riesling grown in light soil and in south warm regions does not manage to develop its best qualities.

Smells: crunchy green apples, quince, orange, lemon, honey (sweet wines), oil, toasts.

MUSCAT

Muscatel is cultivated in the South in clay soil with pebbles and on sunny rocky slopes. High-quality sweet wines are made from this sort. Grape, must and young wine are characterized by rich muscatel aroma.

Muscatel is gathered quite late when it acquires high saccharinity. Quite often wine is made from raisins.

Smells: grape, oranges, rose (Alsace), bergamot (Alsace), raisins (fortified wines), barley sugar.

ALIGOTE

This is one of the most famous grape sorts. Timely harvest and production technology maintenance ensure high quality of table wine produced from Aligote. The wine is characterized by straw-goldish colour with a green tint, marked grading aroma, lightness, freshness, mildness and a balanced taste. The wine often acquires a specific bitter taste.

PINOT BLANC

The wine produced in Alsace from this sort is light like Chardonnay, but without seasoning in an oak tun. It has fresh vivid taste with the shades of apples and oily fruit.

FETYASKA (LEANKA)

Hungary is the homeland of the sort. It is widely cultivated in Moldavia and in the Ukraine. High-quality table wines and wine materials for champagne are produced from the sort. The table wines produced are delicate, balanced, soft, unoxidized.

FURMINT

Hungary, Tokay Region, is the homeland of the sort. It is used for the production of high-quality Tokay table and sweet wines. It is also cultivated in Zakarpatsk, Crimea and Odessa regions of the Ukraine as well as in Armenia and Moldavia.

The sort is predisposed to sugar accumulation and fading on bushes. Wine materials for Tokay sweet wines characterized by a complicated and delicate bouquet with the shade of a quince, balanced taste and deep amber colour, are made from Furmint. In Hungary the production of famous Tokay Assu and Tokay Original made from this sort is set up.

RKATSITELI

This is local Georgian sort. (The English for the Georgian word "rkatsiteli" is "red vine"). Kakhetia is the homeland of the sort. Rkatsiteli is used for production of fine cognac. The wine materials for champagne produced from the sort are of high quality.
